Getting Ready for the 4th of July Weekend
So as I am sitting (ok laying) here waiting till 10:30 for me to leave to go and see Eclipse, I am thinking what I still need to do for this weekend. Karen and Carl are coming Friday night for the weekend and leaving Sunday and taking Natalie with them.
I am making Cheesy Ranch Potato Bake and possibly a raspberry-lime angel food cake. You can find the cheesey ranch bacon potatoes at http://allrecipes.com/Recipe/Cheesy-Ranch-Potato-Bake/Detail.aspx and the raspberry-lime angel food cake at http://allrecipes.com/Recipe/Cheesy-Ranch-Potato-Bake/Detail.aspx. I have made the Cheesy Ranch Potato Bake quite a few times and it is my requested dish now at pitch ins. I add bacon and onion to it but other than that it is the same as the recipe. I have not made the raspberry-lime cake but I am excited to try it.
I am going to try something new everything. I bought The Joy of Cooking a couple of months ago but I haven't used it yet. So I have decided I am going to try one recipe a week each 2 pages... Yes, I know it seems like the movie Julia and Julie but she did all the recipes... I am choosing mine. Once I have more followers or at least a follower I will start asking you what you want me to choose. So look for my blogs and choices and then discussions about the choices.

Starting Over...
So I lost all my old blog data and information so I decided to start fresh. Maybe even a fresh start for me too (more to come on that later). Let me start off by telling you a little about myself, my kids, my family, my pets and even more… Then I want to hear from you…
My name is Kim Castleberry and I am 37 years old… Man I hate saying that age. Once I hit 30, I wouldn’t let anyone celebrate my birthday any longer. I have always lived in Indiana and almost all of my life in Hamilton County but don’t hold that against me.
My kids… Well, I have one daughter, Sabrina who is the love and joy of my life. I also have several step daughters Jennifer and Amanda (I’m no longer married to their dad but I still claim and love them dearly). There is also Amy who shares the same father as the girls.
My family… I am very close to my family. My mom, who is deaf, actually lives with me and helps me out a lot at home with Sabrina and other stuff around the house while I am at work. I have a younger sister, Karen who is one of my best friends. She just moved back to Indiana and oh boy, am I happy! Karen has 3 kids, Natalie, Devonn and Andrew. There is also multiple extended family members… Grandpa, he is currently living in a nursing home due to a severe stroke that has left him paralyzed on his left side. Aunt Linda and Brenda, my mom’s older twin sisters who are also deaf. There is LeAnn who is my cousin but also 20 years younger than me. I am sure there are more family to discuss but these are the people you will hear (see) me talk about the most often.
My pets… Sabrina and I have 2 animals and my mom has one so we will just say we have 3 pets in our house. Our dog Harley is one of the best dogs you can find. People are always asking what kind of dog is he… My answer is I don’t know. Some say he looks like a Shiba Inu… A cop once said he was a Chow (which is so not true)… and to be honest he can look like a red fox at times. Our cats Pumpkin and Kiara act like they are each other’s worse enemies but I think they secretly love each other. Kiara was given to my mom by my sister because Andrew was allergic and my mom loves that cat so much even though she reminds me of the evil cat in Pet Semetery… You know the one…. The evil one… She even acts like that cat except she isn’t dead (I don’t think). Pumpkin is the opposite of Kiara. He is so loving and gentle. He reminds me of Morris the Cat. There is a good story behind Pumpkin. Sabrina wanted a cat so badly so she saved and saved and saved her money until she had enough to buy a cat from a pet rescue. She was actually looking for a kitten. We looked at all the kittens and nothing jumped up and smacked us in the head. Karen pointed out this cute little orange cat that was about a year old. Sabrina said but I want a kitten. I told her to check him out. She did and fell in love. When she went to go pay for him… the worker who actually ended up being the owner of the pet rescue asked me if she could talk to Sabrina alone. I told her that it was fine. She told Sabrina how proud of her she was because most people want kittens but Sabrina did something most people don’t do and rescued an animal that would have probably spent most of his life in a rescue. Wow… I spent more time talking about my pets than I did about my family…
I have some great friends that I will talk about from time to time and you will see pictures pop up with them in it… There is Mia, one of my oldest friends. I have known her for over 20 years. She is married to Mark and they have two kids, Jacob and Sammy. There is also Tabby, who is Mia’s sister and is also a great friend. She has one son Christian.
Ok… wow I have said a lot and want to say so much more.
---I love to cook and I got it from my grandmother who passed away in 1999 from lung cancer. I think I am the only one in our family who got this love of cooking because no one else really enjoys to cook. When she passed away, I got the cookbooks and recipes and I have put them to good use. One of my favorite things to make for the family is German Potato Salad. It reminds me of grandma because she always made it for special occasions. I love the All Recipes website (www.allrecipes.com) and go there daily.
---I love to go to zoos, aquariums and other places with animals. In fact, on Friday I am surprising Sabrina and Natalie and taking them to Exotic Feline Rescue Center (www.exoticfelinerescuecenter.org). I’ll write more on Friday and post pictures from our visit.
I am going to go for now because I have to get ready for tonight… You have to ask what is tonight???? Well, I am taking Sabrina, Amanda and Natalie to go and see the midnight showing of The Twilight Saga: Eclipse. We are so excited. Tickets are bought and now we just have to stand in line to wait to be seated. I am definitely Team Jacob! What team are you on?
